Interesting Week Ahead!

The weekend goes by so fast! I never feel like making a complicated dinner on Sunday nights, so last night it was just soup and salad.

The salad is just spinach, tomato, and cucumber with mozzarella, salt and pepper. The soup is Chicken Tortellini, using a recipe from Real Simple:

Chicken and Tortellini Soup

4 carrots, cut into small pieces
5 cups low-sodium chicken broth
8 ounces cheese tortellini (fresh or frozen)
1 1/2 cups shredded rotisserie chicken
kosher salt
2 tablespoons chopped fresh flat-leaf parsley

Directions

1. In a large saucepan, simmer the carrots in the broth until tender, 10 to 12 minutes.

2. Add the tortellini and simmer until tender, 2 to 4 minutes.

3. Add the chicken and cook, stirring occasionally, until heated through, 1 to 2 minutes more; season with ¼ teaspoon salt and sprinkle with the parsley.

I got this Balsamic Vinaigrette salad spritzer yesterday and used it for my salad – very easy!

Since Husband was leaving to play a pick-up game of Ultimate Frisbee, I had to cover everything to save for him when he got back. Have you ever heard of Cover-Ups? I’m sure there is some bigger name brand version, but my mom got these from the Dollar Store and they are awesome. They are plastic wraps that have an elastic band so that they cover bowl-shaped containers securely. They come in different sizes and are so much easier to deal with than saran wrap.

Works like a charm!

I ran 4 miles today – the temperature was down because of all the rain we’ve been getting, but it was extremely muggy.

Lately my goal has been to stay under a 9:20 pace (ish), and I did that with a with a time of 37:05. Now I have a new goal: I realized that it has been more than a month since I ran more than an hour at a time. I have capped my runs at 5 miles and they have all come in under 60 minutes, so it’s been since the beginning of June. My goal is to run more than an hour before the end of July.

It is hard because it’s so hot, but I just have to allow myself some (un-timed) water/Gatorade breaks and endure. This will all be so much easier in a couple of months.

I am preparing for the week ahead – I’ll be working from morning to late at night Wednesday-Friday, then most of the day Saturday. I will fit in early morning workouts on the days that I can, and will be packing my lunch AND dinner to avoid eating out too much, since I’ll be on the go. I got Husband some easy stuff to make do with for his dinners, although he has informed me that at least one night he will be getting $5 pizza from Little Caesar’s.
